I’m busting through walls like the Kool-Aid man to share another giant pop-tart recipe with y’all. This one is for the brown sugar cinnamon lovers. I was not into this flavor as a kid (I actually still avoid this flavor of pop-tart). I’m convinced that if you liked this flavor growing up, you were secretly like…a little old person on the inside, and that’s real cute to me.
One of my favorite baking challenges is to bake a version of something I don’t typically like. In this case, it’s a massive brown sugar pop-tart.
Lots of brown sugar, toasted milk powder (to mimic that freshly toasted flavor, both in the filling and in the pie crust), hints of cinnamon and a touch of olive oil (or sesame oil if you want to play up the flavors and crank up the roasty notes).
I topped this with a brown sugar glaze and some flakey sea salt. It makes for a really delicious, transitional Fall treat.
